Reading Mails from Third Party Mail Providers

Can you please shed some light on how to capture incoming and outgoing mails from third party mail providers like yahoomail and gmail on a particular machine. I am able to read mails sent or recieved from outlook but what is the methodology that can be used to capture mails through other mail providers.

Let's see...Based on your last couple posts you want to capture all uploads, all emails and all IM chats.

Sounds like a heck of a comprehensive spyware application to me.
