When you connect your ipad to your computer, if you are a mac guy, open iphoto, and the pad will show as a device, and you can upload the photoes. If you are a pc guy, open the device, and import the pictures to wherever you keep your photos on the pad. Neither of these involves itunes. -
Do a restore from your last backup to get your stuff back. Then create a Gmail account, and set it up as Exchange, or use your free @me.com account. Then sync your contacts to it so that you don't have to worry ever again.

Have you tried right clicking on your device in itunes and clicking transfer purchases? usually it transfers stuff from device to itunes but in this case it should do the oppisite.
