Start iTunes on your computer without the iPod attached.
Find the control to enable you to perform manual sync only, and select that. (I don’t use iTunes any more, so I can’t say where that is.)
Now you can connect the iPod and only sync-in (and delete) selectively.

First you need to authorize your PC with your iTunes account with iTunes if you haven't already done so. With your iPhone connected to iTunes and without syncing, at the iTunes menu bar go to File and select Transfer Purchases From - the name of your iPhone.Leave a comment:

when you sync a phone to a new computer, it won't erase your contacts, calendar, settings, etc unless you check the box in itunes to do so....Leave a comment:
