You have to use something called Shape Tweening with Shape Hints. On your stage keyframe the first frame containing the fill graphics (make a square). Add four shape hints (one on each corner), then key frame say 10 frames laters and alter the graphic (convert it to a triangle). Then create a shape tween between the two keyframe and observe the playback. Now and the second keyframe move the shape hints around and play it back again.
It takes some getting used to for shape tweening (motion tweening is much more predictable). Shape hints are the key to getting smooth morphing objects.
Needless to say, don't convert the object to a graphic symbol because it wont work. The animation can be contained in a movie symbol though. Shape tweening doesn't work on symbols.
