How do you convert a MS Word 2007 and PDF forms to XML?

I have some general questions regarding MS Word 2007 and PDF forms:

1. How do you convert a MS Word 2007 form or PDF file to XML?

2. Can you digitally sign the XML form?

you can't digitally sign xml. (this was not intended when xml was created)

I don't have Word 2007, so forgive me if this sounds stupid, but can't you Save As, and choose format xml?
